I agree with Detroi. when you are in your situation it is not easy to see the bigger picture, you automatically think how you always do (money saving, not a bad thing).
I would book whatever she wants and if sadly went the time comes you can't go, then as Detroit says the money lost will not seem important. In the meantime MIL will have something to look forward to which she wants and has chosen, that in itself will be worth paying whatever its going to cost in lost deposit.

Pretty sure our local Whetherspoons was only five or ten pounds a head deposit for Christmas Day so for the sake of £35 or £70 (or even a bit more) I'd consider it cheap when looking at the big picture.I Would Rather Climb A Mountain Than Crawl Into A Hole

In your shoes, I think I'd book whatever your MIL wants, no matter how unrealistic, just in case it is manageable. Then I'd have a contingency plan for having Christmas at somebody's home, so that if your MIL feels unwell on the day she'll be able to lie down for a bit, or take meds that make her sleep, and then rejoin the family.0
