Another suggestion - quick green Thai curry. 1 tin of coconut milk, 1 jar green Thai curry sauce, heat together, throw in chicken, add rice noodles and chopped fresh coriander. I throw a handful of thawed prawns into OH`s after I`ve put mine out as I don`t like prawns myself.0

Chicken Chasseur, or Chicken Cacciatore? Similar but different enough to keep the troops under the impression that I'm doing something interesting & exotic. I've got some leftovers from a roast chicken today, and am wondering what to do with it tomorrow. Usually I'd just make a chicken curry or thick soup, but was wondering if anyone has any other recipe ideas ? (Would like to try something different).

in a book somewhere I have a recipe for 'Glamorgan sausages' that uses finely chopped chicken instead of the cheese. its basically a mix of the chicken, an egg, breadcrumbs (I used stuffing mix) and herbs, left to get soft for a bit then, dipped in a whisked egg and more breadcrumbs and then fried.
i've made them a few times and they're very tasty with wedges, salad and a blob of ketchup0 -

Quite often we do chicken and bacon pasta with whatever veg thrown in (had it last night in a lemon sauce - was yummy), chicken and mushroom risotto, pad thai or thai red curry.0
