Recipe for leftover chicken anyone ?

I've got some leftovers from a roast chicken today, and am wondering what to do with it tomorrow. Usually I'd just make a chicken curry or thick soup, but was wondering if anyone has any other recipe ideas ? (Would like to try something different).

  • Along the line of tacos you could also do fajitas or enchiladas.

    You could also do a pie or pasties with veg and a white sauce, use as a sandwich filling (mixed with mayo and dill is nice), use in pasta with fresh or lightly steamed veg, and a sauce (maybe pesto) and cheese, put into a quiche or omelette or even freeze it.

    Leftover chicken is one of my favourite leftovers!

    Stir fry. Put your chicken in to a container, pour on a few teaspoons of sesame oil, add a good pinch of paprika and some black pepper. Throw in the pan with a tonne of veggies and stir fry through a packet of noodles. Yummy, quick and cost effective.

  • There is only one use for left over buzzard. Curry and stock! If yous are fed up with curry, you can do a BoP chicken jazz!

    Chop up the buzzard, roughly.

    Get a fresh pineapple, chop into rough shapes. Ignore the core.
    Get some onions, roughly chopped. BoP usually does toe nail style to add some punch!

    Fry onions and garlic in pan, with lard not industrial glycerine.
    Add chopped chicken and pineapple.
    Add can of chopped toms, with a dash of chilli. Garem masala to taste. Add spinach for colour.

    In pan do some noodles. When drained, add to pan. Heat and serve.

    In this weather, some kind of chicken salad would probably be best.
  • Coronation chicken?

    My version of the dressing is very simple - large container of plain soya yoghurt, mix curry powder with a little water, then add curry paste to yoghurt slowly till it tastes right, then add the mixture to cold chopped chicken.

    Nice with salad etc.

    Chicken pasta pesto, chicken vol-au-vents, chicken in satay sauce, http://www.bbcgoodfood.com/recipe/cheeky-chicken-satay. You can add chopped cooked chicken to pretty much any sauce.
