Left over pickled onion vinegar

Well eventually I got around to using up the vinegar. I bought some pickling onions from Aldi for 59p brined them over 2 days and stuck them back in the jar with the used vinegar ( washed the jar out first of course) and the new jar of pickled onions is in the fridge!Now Mrs FrugalinShropshire:T Proud to be mortgage and debt free:j0

Pickled onions do not need a fridge, that is the whole point of pickling things

I was under the impression that as the vinegar had not been boiled and jar sterilised in usual way it was better to pop the onions in the fridge as a short term preserve.Now Mrs FrugalinShropshire:T Proud to be mortgage and debt free:j0

just a quick aside, when are pickling onions in season? I'm sure its about now. our market doesn't sell them anymore so am going to jump on the train to a nearby town that has a much bigger market, I really don't want to travel to it more than once or twice.

I just love the chip shop pickled onions that cost you an arm and leg per onion! Anybody have a good recipe for making them please?
Also love silverskin pickled onions, and all this talk of pickled onions, have added them to my shopping list for tomorrow.....I can't wait to pickle them, need some now! (Not that I could buy those little onions here anyway).0
