i've just started making jams and chutney. tonight i tried blackberry curd. followed the recipe, and it all seemed to go ok thickened to a creamy consistency. i've just had a look at it in fridge and the butter seems to have come to the top, theres a liquid that looks like melted butter just sitting there.is that ok? its only been chilling for a couple of hours and it does say chill for 8 hours, do you think it will be ok in morning or have i done something wrong?

It may be just that some butter has separated out.
Try lifting it off tomorrow and see what your curd tastes like.
It's not likely to poison you - just maybe taste disgusting- but will probably turn out to be OK.

I'm glad to say the blackberry curd is really yummy, shouldn't have panicked afterall! Its quite a delicate flavour i thought it would be stronger like blackberry jam. keep having a spoonful from the jar- sure thats not good fro the waist line!
here's the recipe i used marie, there were a few different variations when i googled for recipes.
1 1/2 cups blackberry puree ( cook 4 heaped cups blackberrys and strained them through sieve)
1/2 cup sugar
4tbsp butter
2 eggs
2 yolks
lemon juice to taste
put puree in pan, stir in sugar and butter heating gently.
whisk eggs and yolks in bowl and stir in some of the hot puree to warm it.
add egg mix to pan, cook over low heat stirring, until thick
pot in cooled sterilised jars chill in fridge for 8 hours
store in fridge use in 2-3 weeksWord for 2023 …PROACTIVE 🧡 2023 -decluttering campaign 1020/2023 ⭐️⭐️Saving towards paying off car in November…£720/£1500 🚗0
