Best time to book a late deal to Europe

Good morning,
We (self & husband) usually holiday in the UK, but this year we've ended up with a week off in November. We've decided to try a package somewhere in Europe. We like the idea of a bit of sun but I'm not good with hot weather, and we also like peace and quiet, so we hope we stand a chance of enjoying ourselves at one a resort-type-place, perhaps in Greece or on the med.
We have a two week window within which we can both take 6 days of leave (so we could go Monday to Monday, or whatever works out best), and we don't need to fix our dates more closely than that until we book - we're lucky that both of our employers have been pretty flexible.
Anyway this is all very new for us, and I'm usually a 'plan everything in advance' kind of girl, so we'd really appreciate any advice on when is the right time to book. We don't really mind where we go, it's always nice to see somewhere new, and I don't know how late to leave it. We'll be inside that '8 to 10 week' window fairly soon, but is it better to hold your nerve for a bit longer?
Without any package holiday experience I'm not quite sure what to look for, but I would guess we'd be at the more expensive end of what's on offer in the average holiday brochure.
I should probably add that as it's just the two of us, if the worst happens and we don't find anything it won't be a disaster. (We'll find someone in the UK to visit I expect...)
Also if anyone has any tips about what we should check out before we actually sit down to book, we'd love to hear them

Malta?
Short flight, small island, plenty to do, excellent inexpensive public transport.
We go 28 October. Flying with Air Malta @ £130 each return inc 20kg.
Staying at Santana Hotel in Bugibba on B&B. X3 bus from Luqa Airport stops more or less outside.
Booked the hotel direct.
Also worth a look at Chevron Holidays who specialise in Malta, and offer lots of choice.0 -

A good question! I have no idea what would be reasonable, but I guess a maximum would be about £1200 for the holiday so that we have some spending money too.
If we went all inclusive, we could afford a bit more. (Never done that either...)

When would you suggest is the best time to start looking for the best deals? Given that we don't mind where we go too much, is it a case of the later the better, or will the nice holidays all have sold if we leave it too late?
