I love these but I tend to substitute parmesan for the nutritional yeast as I'm not vegan and tend to have it in the fridge.

Once you have the ingredients they are cheap to make and they freeze well.
I have made the mixture into burgers, koftas and dusted in bread crumbs and served with a side salad.
Duly saved a note about that and will have a go at those burgers - and have a good read of the rest of the blog. Blog looks better than many vegan ones - I find many vegan recipes so "worthy" and offputting that that's as far as it goes - but these might be more interesting.
Fingers crossed it's one burger recipe I can actually manage to get to stick together - as every burger recipe I've ever tried so far has ended up falling apart:rotfl:0 -
I know you said you're not a great cook, but what meals do you make now? As the easiest starting point is usually to cook twice the amount you would eat and freeze half. It adds barely any prep time compared to making the smaller portion. But do this even twice a week and within a month, you'll have a week's worth of meals stored up.
Most meals are suitable to freeze either prepared for cooking later, or fully cooked just to reheat - particularly one pot/dish style things like curries, chillis, stews, pies, pasta bake, etc.
Well at the moment I sometimes cook enough to cover two meals each for me and my husband, and we just eat it two night's in a row. Well, mid-week anyway. It just gets in the way when it's my night to cook and something comes up - which it often does, whether it's husband's train delayed, or I have plans, or my son is playing up/poorly, etc.
I sometimes cook a butternut squash and spinach lasagne and freeze that - it's really good and freezes well. But with other dishes I'm just not that good and needed some fresh/easy ideas. Sometimes I make things and the veggies go slushy
I have tried a risotto in the slow cooker twice which tasted nice but was mushy. I'll have to practice with the timing of that....
Does anyone have good casserole recipes or recipes with a different flavour (for me) such as...Jerk Chicken that I can turn into a veggie version? Or a specific curry recipe? Or...anything reallyMy favourite hobby is cutting up credit cards and bills whilst eating chocolate!0 -
I,m going to try this recipe tomorrow, for squash, Gorgonzola and rocket pie, I,m using spinich as it was much cheaper for the weight needed - I guess you could make smaller ones and freeze them, then cook from frozen.

You can make & freeze curries/dahls easily...my mum also makes & freezes chapatis for me, as I can't make them to save my life!
When my parents are not staying with me, we have veggie quesadillas made up and frozen individually in the freezer, which we cook up in a dry frying pan on a very low heat. 15mins on each side. Mine are filled with the following: red onions, sweetcorn, peas, peppers (any colour), black beans, kidney beans - all tossed together with coriander, taco seasoning mix and a bit of grated cheese. divided up into the tortillas and then individual tortillas are wrapped in baking paper and then frozen. I end up taking one to work every now and then and also we have them on a Friday night, if I get in late from work. Very easy and completely lovely, especially when having it with tzatziki (wrong spelling I know).

I'm vegan and batch freeze lots of things, such as:
Chilli
Dhal
Shepherds pie
Burgers (either freeze when raw or when cooked)
'Meat'balls
'Sausage'rolls
Sweet Potato and bean casserole.
I've also started meal prepping by chopping up loads of veggies, cooking big batches of rice etc on a Sunday and using them throughout the week. It saves loads of time!0 -
frittata - I make sweet potato spinach and feta ones in muffin cases. They freeze well and can be handy to grab for a quick lunch on the go as well.All shall be well, and all shall be well, and all manner of things shall be well.

I make a big pot of marrow "ratatouille" when the ingredients are cheap and freeze in tubs or bags for use throughout the year. I use it either on its own with rice or as a side dish or made into other dishes such as sprinkled with cheese and breadcrumbs and baked, whizzed up and used as a pasta sauce. Add beans for a stew type dish or use topped like a cobbler.0

I do a couple of dahls
Veggie curry using what ever is left over.
I freeze in different portions, single with the rice, single on it's own, enough for just the kids, enough for 2 adults, that way I can take the correct size portion out of the freezer when I need it. The HM ready meals are great when everyone is eating at different times due to work/sport etc
My freezer is currently almost empty so batch cooking starts again this week, tonight is chilli using soy mince, I will do a less spicy version for the kids and hot one for adults.0 -
lemony lentil soup
heat 1 tsp oil and saute half a chopped onion until soft and golden, now add 1 carrot (chopped) and 1 diced potato - I like celery so I usually add 3 sticks of chopped celery too. Saute for another 2 minutes then add 1 tsp ground ginger (original recipe uses ground coriander but I don't like it), 2 cloves of garlic minced and 1/2 tsp ground cumin. Saute for another 30 seconds then add 2 pints of veg stock, 1/4 tsp salt and 250g dried red lentils. Simmer for 15-20 mins then add 1tbsp lemon juice and 1/2 tsp lemon zest (I use juice and zest of 1 whole lemon) and turn off heat.0
