    What's your budget?
Will be pretty expensive New Year's Eve.
How far out are you prepared to be?
What sort of accomodation do you want? 5 star or cheap & cheerful.

3 or 4 star would be ok. 30 mins or so from the centre.

Travelodge hotels have some good rates for dates from 1st Jan for e.g. Wembley High Rd TL is about 30 min tube journey from the centre of London, beside the train station and about £30 a night.( do not book the other Wembkey TL as it is in a high crime area). You will pay a high rate for NYE at any hotel.

Take a look at days inn Waterloo.
Excellent location for £83 per night on travel republic.
There are nicer and more expensive hotels but I think this is a great deal and excellent location for that price.

The Travelodge hotel in Southwark has some good rates 1st Jan £32, 2nd Jan £38, 3rd Jan £48, 4 Jan £48 and 5 Jan £38. Couple minutes walk from Southwark tube station, 10-15 mins walk to the Thames embankment with the London Eye, Houses Of Parliament, Big Ben, boats to the Tower Of London. Half hour walk to Covent Garden from there. Covent Garden is £49 a night for 1-6 Jan, apart from 4 Jan when it is £60. Handy location for getting to a theatre box office before they open to queue for cheap day seats.
