With booking.com if it is a "pay at hotel" booking, you are likely to have to pay in the local currency of the hotel. The GBP price is indicative based on today's exchange rate, but it will be the prevailing exchange rate at the time of payment (or the rate at which you exchange money if you do pay in cash) that will apply.

For comparison I find it easier to change the currency on booking.com to "Hotels Currency" and then compare the rates direct with the hotel's website.
