just thought I'd drop in and say that the mushroom burgers were a big hit, so special thanks to butterflybrain. I'll also be trying the butterbean burgers.
I also thought I'd share my recipe of the summer, which also uses butterbeans (cheaper than chick peas, until I suppose they become "fashionable"!). It's a protein rich dip that can be used on bread etc.
This is for a small tin of butterbeans, drained, and you can use any oil that suits you
fry 1/2 onion in oil until it starts to caramelise, then put 1/2 lemon in the pan, so that begins to caramelise as well (if they are small, use a whole onion & whole lemon)
turn off the heat and add a teaspoon of cumin, turn it around so it warms a bit and mixes with the onion.
now squeeze the lemon into a food processor and add the onions & cumin
whizz together with a tablespoon of tahini, the butterbeans, salt & pepper to taste, and some extra oil to thin it a bit
I find it lighter than hummus0 -
We are not ourselves vegetarian, although we cut down on meat, and we have a number of vege friends.
So, I want to do some BBQ dishes that are not halloumi or vege kebabs.
I have a fantastic Glamorgan sausage recipe that is much admired, but it will not hold together well enough for a barbecue (unless I just put them in a foil dish)
I know some people here will have some great ideas - many thanks in advance
