I've never seen a tall and thin coach house. Most are basically a first floor apartment that some may convert the roof of if allowed.
OP how often is this happening? Have you ever spoken to the neighbour? I assume you do own the property? I'm afraid you may have been missold or misrepresented to the "detached" element of the coach house.
Garages these days are used by many as a storage area and for DIY. It may be worth contacting building control as I would assume there would be controls for both sound and smells with regards to coach houses. You may want to check that the builder has adhered to these. Obviously if it's a bit older then maybe the rules were different at that time.
If the garage owner is basically running a car workshop from the garage daily then it may also be something for Enviromental Health and/or planning to look into. Remember that will come at the potential cost of a dispute to declare. If however he is merely tinkering with cars on a hobbyist basis I don't see that he's doing anything wrong.
Hope you get this sorted. A mediation service may be one way forward given your difficulties.

Have you actually met and spoken to any of your neighbours?
If no, then you really should introduce yourself at the earliest opportunity.
Explain you haven't had much chance to say hello as you work odd hours and go to sleep in the early afternoons... Do not complain about any noise at the first meeting with the neighbour who is doing this!!
The 'offender' may be mortified (as I would be) to realise he was disturbing your sleep and then try to reschedule his work to earlier in the day... whether those works are permitted or not by any Codicils to the Deeds... and even though 2 in the afternoon of a weekend is an entirely reasonable time to do such work.
Notes or letters through letter boxes are just likely to raise hackles, and generate an "I'll see you in hell first" response.0 -

Him to do in his garden, at the end of it, right in front of the garage....and I suspect will be just as noisy, if not worse than inside the garage and at this stage, there is nothing you'll be able to do about it at all.0

I would be very careful how you approach it because if indeed you manage to prove that he isn't allowed to do any work in the garage, what will be the alternative? Him to do in his garden, at the end of it, right in front of the garage....and I suspect will be just as noisy, if not worse than inside the garage and at this stage, there is nothing you'll be able to do about it at all.
If the particular type of noise the neighbour makes indicate it's likely to be more a case of woodwork type stuff (rather than car maintenance type stuff) then he wouldnt do it in the garden anyway (wind....rain.....etc).0 -

OP, get out there, meet your neighbours, size them and the problem up with the evidence of your own eyes (not just your ears lol) and then decide.
If you really then wanted to put something through their door, I'd suggest a suitably highlighted copy of the lease agreement. Still aggressive but much less creepy.0 -

I read in a computer periodical that security staff from GCHQ used to on occasion leave USB sticks lying around outside "lost". If one of the staff plugged them into their PC they would instantly know, and it's goodnight mr. chips to them....0 -

I might - but I'm fairly sure I'd be safe to do so due to the OS I use. I'd not suggest the average person take the risk until they'd at least verified it came from the neighbour (and maybe not then!).
I'd certainly attempt to adjust my habits to accommodate a neighbour in this situation, even without the lease terms, so I do think the friendly chat is a good bet.0 -
if he is reasonable he might agree to install sound proofing in his garage to see if it alleviates the problem0
