Will I be able to cancel?

My mum has decided at the last minute to join us on a trip to Greece. In a panic because everywhere is filling up, she booked online tonight using a debit card - the booking confirmation says that the card has not been charged just taken as guarantee, but also says the booking is non-refundable.
Are we entitled to cancel tomorrow morning, and can they charge the card if we do?
The reason for cancellation is that she's paid about 5x the going rate to get a "last available room". I'm pretty sure we can get an alternative in the area and save a thousand pounds or more if we are quick about it.

Without fully reading the T&C's of the booking site I doubt anyone on this forum can tell you but I don't think that there is an 'entitlement' to cancel just because you are having second thoughts.
I would contact the travel provider first thing in the morning and calmly and politely ask if they can not process the booking.
Some online travel agents don't work from live inventory and effectively take down your order to process it manually. This might be the case for your booking and why if you call them first thing before they act upon those booking instructions you might catch them before any actual reservations are made with their suppliers.0
