    try looking for flights from Edinburgh/Glasgow for your dates (skyscanner, kayak etc) see whats available, then check out hotels/apartments separately (trivago, booking.com, hotels.com, tripadvisor etc etc).

    I'm going away for a week with my daughter in late August, booked it about 2 weeks ago, doing the above (I had a look on thomascook and holidayhypermarket for packages but couldn't get anything I wanted under £350 each for a week, doing it my way we've got the accommodation and location I want, for around £270 each, including all flights, baggage, transfers, and hotel).

    eta - just had a look on the thomascook website, there are some good deals for a couple of days before your latest date for flying if you can go from Glasgow to Crete or the Dalaman area of Turkey for a family of 4, around £1000 total.
