Cancelling credit Cards

I have more cards than I need.
From a security point of view I want to reduce them.
How do I cancel them without my credit rating being affected?

You just cancel them. Ignore any credit score you may have seen.

Get a copy of your credit record from noddle or clearscore and cancel any card bar the oldest one (as you want a aged record)

Same boat. I have two starter credit cards, they are both about the same age: October last year, so not that old. Would it be wise to keep at least one, or given they are both less than a year, this wouldn't be an issue in, say a years time?

If they are lowish limits i would suggest you keep one and rid of the one with worst terms
