I need crash course in OS

hi everyone

I was on here a lot a few years back but met OH (:o) had DS (:D) and then had DD (:j) and life sort of got away from me a bit :rotfl:

It's been a year since I had DD and OH is struggling a bit at work after some people have pulled contracts due to the referendum vote :mad: so I'm looking at going back to work full time

I've maybe 4 weeks to practice and get mentally sorted so I dug out my slow cooker, but I've forgotten how to use it :eek:

Could you please remind me about making chicken soup?

I roasted a salt and pepper chicken ands i've de-meated it, put the bones, skin, wings (and wing meat), juices, and an onion in the slow cooker with about a litre of water - no carrots in to add

i think i leave it tonight to cook then fish out the bones and add veggies and 'soup mix' tomorrow morning to make soup for tomorrow night - that about right or am i missing something? i wondered about extra stock cubes but am worried about too much salt

I'd be popping to lidl to pick up veggies and would appreciate advice on what to grab - its been so long since I made soup

It's amazing how those with a can-do attitude and willingness to 'pitch in and work' get all the luck, isn't it?

Please consider buying some pet food and giving it to your local food bank collection or animal charity. Animals aren't to blame for the cost of living crisis.

    That sounds just about right. I usually add a bay leaf and some peppercorns, but you've got the basics. You do need to give it a good boil - I usually add boiling water to begin with.

    Sounds like a big change for you, and I would feel anxious in your place. Very sensible to start finding your way now - it will soon fall into place.

    During that 4 weeks, I'd do a a bit of batch cooking for the freezer if you have one. And I would definitely make sure that you have a couple of meals tucked away - freezer or cans - for those days that go awry (saves heading for the take-away)

    No need for stock cubes - that would ruin your lovely fresh stock. You may need to add salt to taste to the final soup but stick with the basics for now. For the future, whenever I have sad looking carrots etc lurking in the fridge I chop and freeze them so that when I am making stock I can just grab a handful and chuck them in the SC. I also buy and instantly chop celery when I find it in the reduced section - I hate celery but it does add something to the base flavour of stock.

    Mally - I love celery, but loather anything "aniseedy" so I don't like fennel. I don't use it in stock, but will often add it to mince and vegetarian recipes, finding that the "base note" really boosts the flavour in a way that doesn't reek of aniseed.
    I find such things very interesting.
