I would never buy non stick or ceramic coated pans as it always comes away into the food.
I am looking for some pans myself and I have not yet found a suitable set. The closest I have found was a 4 piece set by lacor which have silicon embedded handles but no lids and they do not make lids with silicon inserts that fit the damn pans! Similar in many ways to the Stellar 5000 but without the glass lids which I do not like. I am so damn difficult to please! 4 pans@amazon.it for about €81 I was going to buy them but ATM with the poor exchange rate I decided to wait to see if the exchange rate improves. However they would need lids which I have not yet found a suitable alternative. I did buy one small lid from Amazon which turned out different to what was shown and they refunded me, it has a metal handle and burns my hand! Item number is lacor 94003. I do already have a lacor stockpot which I got from Amazon.co.uk for only £19 and it has been very good and has the same silicon insert handles but they are smaller loop type handles rather than the longer regular types. For £19 for a large stock pot it has been very useful.
The Stellar 5000 5 piece is £140! However that also includes a non stick milk pan which I do not want. The lacor is all stainless without the unwanted non stick and cost considerably less. It means finding lids though and I have not yet found anything suitable. Why cannot lacor make lids to fit these damn pans? Well they do but not for the 14cm pan. 14cm are meant to be milk pans but I do need a lid for mine.
1/ Consider what heat source you will be using it on
2/ Sizes you need
3/ Type of lid you prefer
4/ Stainless or non stick/ceramic
5/ Whether burnt hands are appealing or not
6/ Think about pouring because some types of lid fitting make it very difficult. I prefer the curved pan edge rather than the type where a glass lid sits in a ridge. The Stellar 5000's look okay in this respect but I dislike glass lids
If you like the 5000 (and they are very nice looking) you can buy replacement lids from Stellar. We lost a lid (I will never know how) and it was replaced for a few £'s.0 -
Stellar pans! Had my stainless steel Stellar pans for 30+ years. All stainless (including knobs & handles), used in dishwasher and hardly a mark on them.0

Only time I would ever burn my hands with Stellar pans is if it has been in the oven, another bonus of not having plastic handles. In stove top use they don't get hot.0

I so miss my stellar pans, they didn't work on my induction hob so I'm using a right mis mash of pans
Op. Try to hold off till the January sales, I'm sure I got my old set in the sales at 40% off. Makes them much more affordable, esp when you think how long they will actually last0 -
Have been using Mauviel for years and have no doubt that they'll out last me.0
