Problems with neighbours - advice?

We recently moved 150 miles to a village on the West Sussex coast. A few months ago we decided to tackle 2 30ft conifers and several 20ft shrubs in the front garden. After attempting to shape things we decided to take the trees down and reduce the height of the shrubs. This was then when our neighbour (a local Parish Councillor) came out of her house and demanded to know why we were taking her privacy away (only her spare bedroom window faces the front). We explained that the conifers we taking away our light and were difficult to maintain but she insisted she was right. We calmly ended the conversation and cut down the trees.

Last week I spotted the husband of the neighbour spraying something on my shrub. I went out and asked what he was spraying but he denied he'd done anything. I challenged this as I'd watched him out of the window but he still denied it. I now know it was probably weed killer as the leaves on the shrub are now black or burnt looking.

They are obviously not reasonable people and don't really know what to do to stop our shrubs from being killed! Any advice?

install discrete CCTV overlooking your property and film them if they do it again, then inform them you have CCTV and are going to the police with it.
Also inform them they have no right to say what you do with your property.
Prepare for a war, or more likely the cold shoulder from them, as they are probably too chicken to escalate things.

Please contact me by PM as I have some issues of a similar but reversed nature, but, CCTV is the only way to be honest.
