I hot smoke salmon (and trout and mackerel and chicken and duck). I also use the trimmings from filleting for risotto. You can smoke frozen and defrosted fillets, or freeze once smoked.

I do like Salmon en croute. There used to be a recipe on the Philadelphia website.Never put off till tomorrow what you can do today!:mad:
