Fav Salmon dishes

I've been very lucky and have been given a whole salmon straight from the river last night

I'm about to clean it and am wondering how best to cook it

It's pretty big and with there being just three of us I think cooking it whole will be a waste

So your fav ways with salmon please? Plus has anyone ever hot smoked their own?

    I love salmon and pasta in a cream sauce, salmon fish cakes with sweet chilli sauce, poached with new potatoes and green beans, salmon and broccoli quiche, salmon Wellington. Lucky you I'd cut it into portions and freeze and use as and when don't forget to freeze so you can get single portions out too. x
    Why pay full price when you may get it YS ;)

    Oh I forgot to say I've never smoked salmon but my friend has had good results with trout. She has like a meal box and used oak shavings. X

    We love salmon and spaghetti, super simple it's just spaghetti (not the tinned kind), pan fried salmon fillets, chilli, garlic, lightly steamed broccoli, olive oil and a good squeeze of lemon juice all mixed together and served with a good glass of wine. Can you guess what we are having tonight?

    If I were you, I'd probably portion it up into fillets/steaks and freeze most of it for now.

    With what you have left, well I'm drooling at some of the suggestions so far!

    But for me, there is nothing like lightly poached salmon with Tartare sauce. Nothing. It even smells of Summer to me. Can be served hot or cold too.

    Do take out all the pin bones and other bits though! A tweezer is great for this.

    I actually do like salmon tikka! And if you have a whole salmon, then you will find it a bit of a change!

    I find salmon freezes beautifully, but here is another recipe that preserves it, and uses up left-over cooked salmon - it is essentially a potted shrimp recipe that works for lots of cooked fish:

    Melt some unsalted butter - I work on a roughly equivalent weight to the salmon. Melt it slowly add add some peppercorns, a couple of bayleaves, some allspice berries and a pinch of paprika or cayenne. Take off the heat and let stand awhile, then strain and put back on a low heat. Stir in the fish - you should be aiming for a good coating of butter, Taste, and add more cayenne if you like it hot, and at this point add a little salt to taste.
    Pack into small ramekins (or you can use a bigger dish if you like. Make sure there is a good coating of butter on the top, by pushing the fish down with a teaspoon.
    This will then keep for a couple of weeks in the fridge - much longer in the freezer. It is lovely on toast for a "treat" supper or is often my "posh starter"

    Salmon and pasta is a big fav here, we are having it tonight as it happens ( I buy hot smoked salmon for it)

    Just this beautiful fish needed inspiration :)

    It's cleaned boned and filleted. The bone and head have been boiled and stripped of any bits of flesh ( the chooks and the dog have been spoiled today)

    Salmon en croutes for Sunday. We are away for a day trip on Tuesday so leftovers for our picnic

    I'm hankering after a dish I used to eat a lot in London chilli yaki soba (so) so will look a recipe for that


    It being a wild fish it really does tastes wonderful I hope to do it justice

    Best of all it cost me a dozen eggs :)

    We eat Salmon regularly, two favourite recipes are Salmon with Chilli Ginger Sauce ( Hairy Dieters cookbook ) and 5 spice marinated Salmon ( recipe came from a random magazine )
