Cake that keeps fresh - help please!

I use a madeira cake recipe for cakes that are being iced, and they happily last that long. However, all the professionals I know recommend that you bake the cake, cool it, freeze it, then defrost before trimming/splitting/layering/buttercreaming and covering with sugarpaste.
Freezing changes the texture of the cake and makes the sponge easier to work with, without drying it out. Once you have sealed it with sugarpaste, then it should last a week quite happily.0 -
ooh I feel a baking day on, I'm going to just have to try them all!!! Tabskitten I can't get the recipe as when I click on mocha cake it brings me back to the contents page, or is it just me??Would a choc ganache last or would it have to be fridged coz of the cream? Thanks so much for all the recipes!!0

I make a sponge cake and freeze it before icing. When i need a cake i take it out and ice it (it only takes about 30 mins to defrost). This saves loads of time and is great if you have the kids friends at short notice0

If you boil the cream and melt the chocolate in it (rather than melting chocolate and adding cream), and the house isn't too hot it shouldn't be a problem keeping the cake at room temperature for a few days, but if you're covering it as well as filling, then that would stop it drying out if you did want to keep it in the fridge.0 -

I can't imagine Devils food cake lasting a week in my house with my hungry grandson it would dissapear before your eyes.I agree with a lemon drizzle cake though as it will be fairly moist with the lemon juice squeezed into it and then topped with lemon icing.I bought some good lock & lock cake boxes from John Lewis and although not cheap have seemed to keep cakes a lot longer and softer than the cheaper versions that I had before.I am away on my holidays in a couple of weeks and will be taking some cakes and Twinks hob-nobs with me as we are staying in a SC cottage for a week and I know my friend enjoys a bit of cake with a cuppa in the afternoon I will probably make a coffee cake as well so we don't run out.When we go out for the day we always take a flask and sandwiches and some fruit so we keep the cost of lunch down.I may even take some apricot scones with me I must make a list and I will have a cook-up day on the day before we go.
