Hi Oldstylers
A friend of mine is going into hospital for a long stayI want to make them a nice cake but it needs to be one that will keep for ages because they're likely to be up and down with their appetite. Ideally I'd like to make one that could keep for a month if that's possible. He's in his late 20s and will eat ANYTHING.

Here you go!
Rich Sticky Gingercake
12oz plain flour
2 level tsp ground ginger
2 level tsp ground cinnamon ( I sometimes use mixed spice instead, works just as well)
8oz butter
8oz soft brown sugar
4oz golden syrup
4oz black treacle
1/2 pint warm milk
2 level tsp bicarbonate of soda
2 eggs, beaten
Grease & line a deep tin 71/2" by 11" (I tend to use 2 loaf tins, one 2lb one 1lb..it makes loads!).
Sieve flour & spices together on a plate.
In a large saucepan melt the sugar, butter, syrup and treacle.
Remove from the heat & add the flour & spices, stir in well.
Mix the warm milk with the bicarbonate of soda & stir into the flour mixture with a wooden spoon.
Finally stir in the beaten eggs.
Pour into the prepared tin/s and bake in the centre of the oven at approx 325F or 160C or gas mark 3 for about 1 hour. (mine is a fan oven & it takes about 50mins)
Cool and cut into portions
It will keep for a long time in an airtight container & improves wih keeping.
Very easy to make & its lovely!0
