How long is it ok to leave the meals in the freezer for? Don't want to get carried away with this meal prep, haha.
Most food's fine/safe almost indefinitely ... months, more than a year. The real problem that you find is that the longer you leave it in there, the less you fancy it .... partly because of your fears of it having been in there a long time.
So, the answer would be to make sure you DO eat those things that you're "putting off" ... and then remember you never fancied it after it was frozen and vow to never make it again and freeze it.

The key is to remember to use the oldest first so you gave a good rotation of meals. If I use the last of the chilli then that will be my first batch cook. I think most of us do the same or similar kinds of food.
I keep a record of what HM ready meals are in the freezer, nothing grand just food type then date and number of portions. I normally do most of my batch cooking on Sunday's or evenings, this still stems from when I was working.
