A lot depends on where you want to go and what your budget is. I would consider booking it yourself (flights and accommodation separately), rather than a package through a main operator. I like Skyscanner for flights.

The thing about waiting until the absolute last minute is that the accommodation that's left tends to be left because not many people wanted to stay there!

Most people find icelolly a very unreliable site so be warned. I would not advise you to leave it to the last moment at all, you are travelling on the most popular and therefore most expensive weekend of the year. There will be lots of deals to Turkey if you are prepared to take a risk but accommodation prices in Spain and Portugal are off the scale if you are booking independently.

I am amazed to see air fares have fallen for the 23rd to places like Palma and Malaga but that is because there is no cheap accommodation left and if you don't book now, you may get very little availability, Turkey and some of the eastern Greek Islands (worries about refugees rather than bombs) have space but Spain and Portugal are packed.

I have found the Canaries to be reasonable during the school holidays, think people prefer the shorter flights to the Med. Thomson have a week Ai in Tenerife on 24th for around £400 p.p. inc transfers and luggage.
