Are you not supposed to keep eggs in the fridge because the temperature in a home kitchen varies more than in the supermarket ?

I dont really know but when i worked at the egg farm, they were not kept in fridges and also should be room temp when you cook them

Nope! and if you do you certainly shouldn't keep them in the egg holder thingy that most fridges have in the door, the constant opening and shutting does them no good...apparently :)

Storing eggs in a fridge means that any bacteria like salmonella will not multiply, but some argue that fridges ruin flavour. The British Egg Information Service recommend keeping them at a constant temperature below 20 degrees: easiest in the fridge.

On another subject...I never put supermarket tomatoes in the fridge...There never seems to be a good flavour from supermarket toms.....But leaving them on the windowsill to ripen lets the sugars enhance the flavour....Well.....I make myself believe it....Nothing as good as a garden greenhouse tomato....

So why is the egg holding tray a design feature of many fridges .

‘The racks in the fridge door are the worst place to store eggs. The constant shaking thins the whites and the flavours of other foods can penetrate the shell.’

Milk should also not be kept in the door either due to temp fluctuations!
