    I could never ditch my cookbooks. I have some that are literally falling apart, I also have Delia and Hairy Bikers (I love the way they cook, bit of this, bit of that, their recipes are so adaptable) but my favourite is Mrs Beaton, it has the same Christmas cake recipe in it that my mother always made :D



    What is it coated with (apart from hoardes of Elite teeth :D )

    All of these persons recipes are widely available on the internet...I just search for what I need at the time....I love the Hairy Bikers...brilliant recipes...Reminds me that I must try out their Picalilli recipe.......


    The apple pie is pretty simple......

    prep the apples...thinish slices.....
    9 inch dish

    put the pastry into the dish, followed by the apples...I used some I had from the roadside..Always loads of freebies that people put out...These were eating apples.....

    cover the apples with a lattice of pastry....Then....this is the interesting part...

    1/2 cup of unsalted butter
    1/2 cup of white sugar....(I used castor sugar)
    1/2 cup of brown sugar....(I used soft brown sugar)
    3 Tablespoons of plain flour...

    melt the butter in a saucepan...(I don't have a hob..so used a glass jug in the micro) Add the flour(basically as you would for a white sauce base but without the milk) give it a mix until smooth...add in both the sugars and water and mix it well....I put it back in the micro to help to dissolve the sugar.......Then pour it over the top of the pie....The mixture runs in through the lattice....I also used a pastry brush to make sure the mixture covered the pastry as much as possible.....

    Into an oven at 215c for 15 minutes...Then reduce the heat to around 170c for a further 35 to 45 minutes...This is dependant on your oven..I have a fan assisted so it was around the 40 minute mark for mine.....

    Whip it out...can be served hot or cold with lashings of custard/cream or ice cream..dependant on what you fancy....

    It was delishous....My neighbours were pretty impressed.....:rotfl::rotfl:
