I would recommend Clube Villarosa in Praia da Rocha, Great pools, good bar prices & 10 minute walk from the brilliant beach and all the bars/restaurants along the main strip.

I booked direct with them a couple of years ago when I drove there, a 1 bed apartment for 4 of us was about €130/night.

If you want low key and a quiet area with good restaurants and not too busy have a look at Cabanas, loads of apartments etc and about 45 minutes drive from Faro. Once there you can travel on the railway all along the coast to Lagos one way or even to Villa Real where you can get a ferry across the estuary if you fancy a day in Spain. Fares are very cheap and trains are quite comfortable.
