Fresh (pepper)mint glut

My front garden is currently vigorously green as various herbs have made the most of rain & sun. I have two mint clumps, both of which are easily 2' high & thickly leafy.
Suggestions please as to what to do with these monsters that we can enjoy not just this week but in the coming months?

As others would say cut and use the mint. Examples being in drinks, make mint jelly/sauce. dry mint for later use.
Mint will regrow but I can't remember how much above the soil level to cut.0 -
You can freeze it to save it, you can freeze ice cubes with it in to make drinks, and you can make ice cream. Peppermint wine is delicious, and it's a good flea deterrent.
You can also distil the oil, but it's tricky....0 -
I chop mine finely with a little sugar and freeze it in cup cake cases, then use in mint sauce for lamb, curry sauces etc.:mad: :j:D:beer::eek::A:p:rotfl::cool::):(:T0

I'm with fruittea I use my mint in Mojitos, some blended into the cocktail itself and some as a nice garnish.0

Either use it up quickly - in cocktails, salads (it's really nice with strawberries, spinach and balsamic vinegar, or with watermelon and feta), falafel, make some mint sauce this weekend for a roast - or chop it finely and freeze it in an ice cube tray, it'll keep for ages and you can pop it in drinks, sauces, soups...

I'd also be wondering about icecream - eg chocolate and mint.
The rest would probably get dried for future use - eg peppermint tea.
I shall follow this with interest - as I might be in the same situation at some point.
...and, as with any surplus garden produce, start by giving it away to friends....all part of "trading favours"....0 -
