Urgent advice please; builders have built about 10cm onto neighbours' land!

If they've said not to rebuild the wall in the originally agreed place (maybe because they don't want the work going on longer and maybe because then they won't be able to ask you for any money), why don't you give them the choice:
- Either accept what you can afford (a few hundred maybe, apologise that you can't offer more as you *know* they're nice people and you really want to be good neighbours blah blah blah) and write up something confirming that they've given you the land
- Or you will get the builder to fix it at his expense/claim on his insurance?
If they want any money at all, they'll have to go with the first option. It doesn't sound like they really have an issue with the wall so the second option, where they don't get any money, might not be attractive especially as it will prolong the noise/mess.

Update:
Eventually after a 4 week delay, the builder admitted some liability and agreed to fix the problem by removing the offending part of the wall and moving the roof back onto our boundary.
We kept our patience with the builder as he is actually, to give credit where it is due, an excellent builder and apart from this error, he has been very good.
The work was done at the builder's expense and we spoke to the neighbours beforehand and got their agreement before the remedial works were carried out.
We have continued to keep a good relationship with our neighbours and they are very happy with what has been done. It all looks great and work on all the internal bits is now progressing and hopefully all should be near enough done in two weeks and I shall have a kitchen again! I'm grateful for a microwave, but a 'cooked from scratch meal' would be most welcome again!Father Ted: Now concentrate this time, Dougal. These
