If it's going hard and dry , air is getting to it
Air does not get to our cheese, it is not around long enough!
    For storage!
Inn the cheese dish, covered. Never in the fridge. It does not stay long in the dish, it goes into the stomach! Lovely!
DfV, I have visons like when Raffles has a chomp on cheese. BoP, while drinking wobbleades and quaffing cheese, occasionally lines one up for him, and flicks it across the lounge. He goes ... I now have visions of Ms L throwing cheese like Christians to the lions!

Well I should point out I often buy reduced cheese sometimes in bulk so thats part of reason I want to store it as it can last me a month maybe more but I either don't feel like cheese that day or already full from something else so I don't like leaving it in fridge as its at its use by date (or sell by not sure)

Cheese if fine for weeks if not months past its sell by or bb date

Even if it goes mouldy you slice the mould off, the cheese past the mould is fine

Absolutely fine. I don't think I've ever had cheese that went bad. I too cut off the moldy parts.

^^Suki, I just noticed the difference in how you spell mould vs my American mold :)
Overprepare, then go with the flow.

Sometimes I don't even cut off the mouldy parts.

BoP do you keep anything at all in your fridge? I seem to recall several threads where you recommend not bothering storing food in one!

Freeze it, I cut it into smaller portions first.
Why pay full price when you may get it YS ;)

Wobbleades are stored in the refrigerator to chill. Hence no room to store cheese, butter, and currys!

When I freeze cheese it changes its texture to crumbly so its awkward to use, I suppose if I cut it into slices first it wouldn't be as bad.
