How to replace eggs with soya flour in baking?

We have run out of eggs and DD wants to make muffins. I am sure I have read in the Tightwad Gazette that you can replace an egg in baking with soya flour (which we do have) and water? oil? I can't find the details in the TG as it has no index and I haven't had any luck looking through it. Any help gratefully received.

    Thriftlady makes muffins, substituting milk for eggs. The recipe's here. Or have a look at this older thread for other ways of replacing eggs:

  • It is 1 heaped tablespoon of soya flour and 1 tablespoon of water for each egg ;)

    I make muffins a lot and never put eggs or soya flour in. I use the basic recipe from Susan Reimer's book Muffins -Fast and Fabulous. In it she gives lots of advice for adapting the recipe for different dietary requirements. She says replace the egg with 3-4 tablespoons of milk. This is what I do and you cannot tell the difference -cheaper too :)

    Thank you, pink-winged and thriftlady. I will probably use up the soya flour as we have it, we made muffins and they taste just the same as with egg. Once I have used this up I will be replacing it with milk.
