Meal planning - wk 6th June

I really need to not spend any money this month.

Aiming for £30 in total in the month, with £15 already allocated to scheduled events, so really going to have to sick to the plan.

Training 2 days this week, then 3 days in work.

Breakfasts - Oats, frozen fruit (bananas, cherries, raspberries or blue berries), yogurt.

Lunches - 2 x chicken salad, 2 x broccoli and stilton soup, 1 x sw ready meal

Dinners - 2 x roast chicken, 2 x spanish omelette, 1 x mixed beans on toast.
That sounds like a classic case of premature extrapolation.

House Bought July 2020 - 19 years 0 months remaining on term
Next Step: Bathroom renovation booked for January 2021
Goal: Keep the bigger picture in mind...

Our week will be mainly based around mince, as a friend gave me an enormous pack of the stuff and it's currently in the slow cooker.

    Su: Spag Bol
    Mon: Mushroom risotto
    Tue: Spag bol
    Wed: Mince and dumplings
    Thu: Soup and a sandwich
    Fri: Mince and dumplings
    Sat: Chicken salad

A bit repetitive, but everything's in stock so shouldn't need to buy anything.
  • Meals for this week:

    Ham salad, new potatoes
HM Cod fillets in breadcrumbs with chips and mushy peas
    Roast chicken dinner
    HM Chilli and rice
HM Steak pie, new potatoes and veg
    Chicken balti and jacket potato
Sausages, onion gravy, mash (roasties for me as don't like mash) and veg

Chilli, steak pies and chicken balti already made and in the freezer

Rhubarb (aldi super 6) crumble, mini magnums or fresh fruit for puddings.

Trying to use up food we have in as we're going away soon :j So its quite pork heavy (instead of the usual chicken!)
    In no particular order...

BBQ Pulled pork, lettuce and mayo on toasted buns, sweet potato wedges
Bacon mushroom and Philly cheese pasta
    Cheeseburgers and possibly fries
    Char Sui pork stir fry
Spicy chicken drumsticks, cooked on the BBQ with the burgers if weather allows
Peri peri pork steaks with rice

Also have a squishy mango to use up, any ideas?

Chop it up and serve it on the side with the peri peri or spicy chicken.

(I love mixing fruit and savoury)

eta - I'm looking for suggestions for next week...

I've got 6 frozen figs, and I'm thinking something tomato based, maybe with chicken and BN squash?

Not sure if it'll work, and wondering what spices to put in to complement it.

    Recommendations appreciated.

M - We had chipotle bean chilli, rocket, pickled cabbage, low fat houmous
T - Baked spuds with beans. The weekend is going to be so full of food and booze I want to keep this week simple.
    W - Dhal, rice, naan
T - Fish fingers and salad (for me) or salad and chips (DD and OH)
F - DDs school celebrating Her Majesty's Birthday, so will make tuna sandwiches and little cakes, then dinner at a friends.
S - I'm at Marlow regatta all day. Will make a big batch of frittata and some coronation chicken pies to take along with champers and Pimms.
S - It's our street party for the Queen's birthday - so second half for coronation chicken pies and frittata will be taken along

    This week for me:
Monday: sausages, salad and nice bread (a last minute change because of hot weather)
Tuesday: risotto (This might change too)
    Wednesday: Quiche
    Thursday: meatballs
    Friday: Salmon cakes
    Saturday: Mexican chicken
    Sunday: home-made pizza

I spring cleaned my kitchen the other week, so I am doing a few different things from normal, because I have a few things that I have too many of, especially tinned fish, tinned fruit and herbs and spices.
