Cheese sauce

Hello oldstylers Is it possible to make cheese sauce without milk? I've probably only got enough milk for a cup of tea in the fridge and wanted to do cauliflower cheese for tea. I just wondered if it's possible to make a sort of frugal version.
Oh and I do have marvel in the cupboard too - could I use that?? It's for one person.

Hi MISTY I always use dried milk to make cheese sauce and I make mine in the microwave using cornflour. It works out much cheaper and is less likely to go lumpy than making a roux on the hob. I add some mustard powder and cayenne pepper to the milk powder, mix the cornflour with a little reconstituted milk and then whisk it into the rest of the milk and cook it in the microwave until it thickens then I add in as much cheese as I want for the right flavour and sometimes a nut of butter to enrich it. Season to my liking and it's as easy as that!0

You can use anything else, or nothing. You can simply grate the cheese and let it melt and accept it's "not as runny as a sauce".
Or, yes, you can use the Marvel, mixed with a bit of water (didn't need to say that really, you're not stupid).
Anything really .... or nothing.
I always knock up sauces in the microwave. I don't use the oven/hob and, in any case, as you know, trying to make a lot of things in a genuine "serves one" portion means that only the microwave really manages the job due to the ability to use miniature dishes.0 -

The cheese sauce was really easy to make in the microwave and I will do it like that again - thanks MrsLurcherwalker. I will try using a stock cube and also the cream method (when I've got some in) to see how that turns out too. Thank you all
