Home Insurance Tricky Scenario

Hi,
I'm purchasing a 5 bedroom house that currently has two outbuildings that will be converted to a self contained 2 bedroom annexe, but will be the same residence.
Before completing the house purchase, my mortgage lender requires proof that the property is insured.
Now here the question(s),
do I insure the property as it stands currently, ie 5 bedrooms with two outbuildings? then alter the insurance once the work has been undertaken? or
do I insure the property separately, ie 5 bedroom house, and 2 bedroom annexe? or
do I insure the property as a 7 bedroom property?

You will find many Insurers will not want to continue cover or will restrict your cover whilst the building work is being carried out0
