    There are plenty of recipes employing beans in our recipe collections. Just click on the blue (The Indexes) in my signature and then on Old Style etc. Ideas there for sausage casserole too. Many slow cooker recipes can be done as casseroles so there are plenty of ideas there as well.

  • Chop up the sossies, brown them in frying pan/grill, tip in a tin of baked beans and a tin of cannellini beans and a tsp of sugar. Add some mixed herbs, whatever you fancy.
    (Maybe buy an onion and use half finely chopped to fry with the sausages and half thinly sliced on your pizza? Also, a couple of slices of decent bacon bought from the deli counter so you don't have to buy a whole pack would be a good addition, and could be used to make a carbonara sauce or go on the pizza.)

    Put in an ovenproof dish. Make a savoury crumble mix with the marg and some plain flour and sprinkle on top. Add a little grated cheese if you're feeling flush and bake on med for about 20 mins or until topping is brown. Serve with new potatoes, either lightly boiled or to save fuel, bake them in the oven with a drizzle of olive oil, a sprinkle of sea salt and some rosemary. Hey presto - an almost authentic French cassoulet!

    I've just, well a couple of hours ago, shoved a variation of the sausage and bean casserole in my slow cooker which you could probably make too from what you have in. I browned off some sausages with some left-over bacon in the fridge (over its BB date) and then sauteed some onion, garlic, peppers and a rather mangy looking courgette (:shhh: don't tell DS cos he hates them, but I grated it ;) ) in olive oil before adding the leftovers from a carton of passata, a tin of value tomatoes, about a third of a pint of veg stock and some herbs (wilting tarragon in the fridge) and seasonings (salt, pepper, paprika and a touch of fenugreek) and a splodge of good ole Worcestershire sauce :D

    Shoved all that in my slow-cooker with a tin of butter beans, that have been in the cupboard yonks and didn't know what to with, and fingers crossed I have a yummy meal later! Also shoved a white loaf in the bread maker, in case I can't be arsed to cook spuds later, so we have something to mop up the sauce with ;)

    You could use the chickpeas or cannellini beans instead of butter beans and maybe even add some dried pasta to it to make a complete meal! Obviously cooking just a single meal wouldn't warrant getting out the slow cooker, if you have one, but you could just as easily make it in a large pan on the cooker or in a casserole dish in the oven :)

    Chicken curry
    you need to buy 2 onions and small bag of rice
    fry onions until dark brown in what ever you have to fry in, add powdered coriander, cumin and chilli powder if you have it if not curry powder, then add chicken breast sliced up cook for about 5 mins then add top bit of coconut milk, cook on hob top or transfer to slow cooker and add canellini beans, chick peas, new potatoes and your tinned toms but chop them up and rest of coconut milk if you have tom paste a bit of that and leave to cook. If at the end it is runny because slow cookers dont reduce liquid i would transfer to a pan and cook it till juice is reduced. If you have any of the following they would make it better. Lime juice, peppercorns,lime leaves, salt, bay leaf. This tastes better if cooked then left a day or two before eating. If you can't buy rice because all your dosh has gone eat it with pasta or egg noodles, needs must sometimes. Happy cooking

    sounds delish - and yes, I ahve a bag of rice, I forgot about. Em, I ahve a sneaking suspicion that I may even have a lime leaf lurking in the freezer too.......

    Is it possible to freeze leftover of this if it has coconut milk in it?

    Being a lazy cook on a diet, I use condensed soups as sauce bases by adding less than the usual double amount of water, they are very cheap and some of them are 99% fat free.

    rmac I freeze this curry sauce all the time and its fine. I also put in garlic and fresh ginger at the frying stage but didnt include it because i didnt think you had any but if you have add them it makes a lovely curry. I like it mild so i dont put chilli in but hubby thinks they are only good when his face and hair are wet through so he gets chilli powder, chilli seeds and fresh chillis, its that hot that i could put dog food in and he would be none the wiser. PS for future reference instead of coconut milk you could use yogurt, greek is best but i use anything.

    If you have a sandwich maker or one of the George Foreman type grills, make cheese sandwiches (also add any onion, tomato, even baked bean to the cheese filling), toast them and serve with soup made from any type of vegetables with a bit of potato or some lentils for thickness. Makes more of a meal than just soup and a sandwich. Good luck - you can do it!
