How to get more greens into my diet?

I've found putting a handful of fresh spinach under my meal (pasta, chilli etc) it bulks the meal out and actually tastes really good!
My mum suffers from low iron and has managed to stop the tablets. She takes spatone every morning with oj and eats high iron food at every meal. Added raisins and apricots with breakfast for example. Took her a couple of years though to find the right 'balance' for her thoughCurrently studying for a Diploma - wish me luck

I know they're not the cheapest (although Aldi helps;)) but I buy a range of veg every week like asparagus, mange tout, supersnaps, broccoli and I always have peas and broad beans in the freezer. An interesting side dish is to cook a few of each together so a sort of medley of greens.
Baby spinach works well instead of lettuce in a salad and if I have any left I just stir it into curries or casseroles.0 -
Smoothies… I usually make one every morning. I have a red, green, purple and yellow variety that I switch between. The green one has a few grapes, half an avocado, half a kiwi, half a pear, big handful of spinach, big handful of kale, sometimes some broccoli, cucumber and then some apple juice or coconut water to thin it a bit.0

Recipe may be a grand title, blender blitz is more like it!
I usually do about 100g cashew nuts, half a bag of rocket, spinach or other leaves (I got a mixed leaf salad for 10p YS this week so used that) a tablespoon lemon juice, a glug of any bland oil, a teaspoon of garlic or onion powder, and whizz it in the blender. More oil if too solid, more nuts if too runny.
I also usually add nutritional yeast, but thats a bit specialist, and it tastes fine without - add some black pepper instead if you don't have yeast. Or tahini would be nice. Basically once you have the nuts, greens and oil, you can mess about adding bits and pieces. It's really difficult to make yummy cashews taste bad.
I keep it in a tupperware in the fridge, and it's good for about a week.2021 GC £1365.71/ £24000
