Help to find holiday upgrade to all inc at hotel

Hi , 3 adults with a 4 year old and an inant want a sunny holiday outside of the school holidays so maybe like 01 july.
we would like a good hotel near a beach. big pool a must and kids pool.

i would prefer to pay for room only or self catering and need a hotel we can pay for all inclusive upgrade locally. money wont be an issue at that time its the initial cost now and yes we left it late.

can anyone recommend or help find us something excluding turkey tunisia and greece. needs to be hot like 80-85
probably something like on the beach cause of the low cost deposit.

We stay at San Miguel Hotel in Puerto San Miguel Ibiza (can be found on First Choice). We book direct with hotel but can also be booked on booking.com and don't pay anything until check out. I assume some other hotels on booking.com would be the same. It's called Cartago hotel on booking.com but is same hotel.
Doesn't help with flights though. Not sure if any companies allow you to pay deposit only for flights?
