I have recently got a credit card with Halifax purely to use abroad and avoid any fees for withdrawing cash and making purchases. However, my credit limit has only been set to £600. I am away for a month and am certain that I will want to spend/withdraw more than £600 in this time.
Is it possible to pay off some of what I have spent halfway through the month for example? So that my credit limit is reset and I can continue to spend on the card?

Yes, it's possible and easy to do by a bank transfer from a current account.
Do you have a statement with the details for transfer?

You'll almost certainly have a 'cash limit' of 50% of your credit limit, so £300 only.

Even if I pay in everything that I use the credit card for as soon as I've used it?
I'm travelling to lots of countries with different currencies so I'll be taking cash out in smallish amounts for each one and I'm only really using the credit card to avoid fees for doing this.
I suppose the ideal solution is to get a bigger credit limit!0
