Anybody able to confirm if the price to Gawick (including a journey into and out of London stations) costs no more than a one day travel card?

No, I don't think anyone can confirm that.
Where are you starting from?
What time of day are you travelling?
What does "including a journey into and out of London stations" mean?

'Thameslink only' fares may be cheaper than Oyster PAYG or a Travelcard.
Put simply - the fares to Gatwick are a mess.0 -
Travelling from a zone 3 station in south London, into London Bridge, then out to gatwick.
Reason I ask is that there is a maximum cap on Oyster cards each day, but it only gives prices up to zone 6. at £11.80. Of course Gatwick is way outside London.

Stick your departure station into that Fares Finder I linked to earlier.
As an example, I chose Blackheath as a zone 3 departure point and found the Oyster payg single fare to be £14.00 if travelling via zone 1 during peak hours. By avoiding zone 1 that can be done for £11.40 in the peak.0 -

Daily (and for contactless, Monday-Sunday) caps for National Rail journeys beyond zone 9 can be found here:

An adult peak cap from zones 1-9 to Gatwick (or vice versa) is £30.50, an off-peak cap is £19.00. Note that using Oyster/contactless on Gatwick Express trains fall outside the capping regime - i.e. it applies to journeys on Southern and Thameslink trains.
The single fare from a zone 3 station in south London to Gatwick travelling via London Bridge will depend on whether the passenger exits through the ticket gates at London Bridge onto the concourse and then re-enters through the ticket gates to get to the platform. If the passenger does this, then the fare will be higher for going via zone 1. If the passenger can avoid doing this, the system will charge the lower non-zone 1 fare if there is one.
Whether you can avoid exiting and re-entering the station at London Bridge depends - because of the current rebuilding works there, there's no way to get from the Southeastern/Kent platforms to the Southern ones within the gated area.0 -

Here's an example of how bizarre the fares can be.
For example, a passenger who travelled from Watford Jn to Gatwick before 0630 and was able to board the 0700 Victoria to Gatwick, would only have been charged £10.40 for the whole journey, despite the 0700 being a GTR Gatwick "Express" service.
However a passenger who made the same journey, but got the 0715 would have been charged £26.20, because that train departed from the "premium" platforms 13/14.
A passenger travelling from Hadley Wood to Gatwick Airport, touching in at 1555 would be charged only £8 if they changed at King's Cross / St Pancras and didn't use the London Underground.
A passenger making the same journey, but tapping in 10 minutes later, and using the London Underground between King's Cross and London Bridge, would be charged £16.20
A passenger making the same journey, tapping in at 1555, changing at Victoria, would be charged £10.20 if their train was one of the faster trains taking 31-33 minutes from Victoria, but if they caught one of the slower trains taking 32-36 minutes branded "Express" and if that train departed from the premium platforms 13/14, they'd be charged £25.10
The fares are absolutely bonkers.0 -
As there is no daily capping applied to Gatwick, you should do better buying an advance ticket rather than using Oyster or contactless debit card on the day.No free lunch, and no free laptop0
