Look at other court defences on here and show us your draft like everyone does, with bullet points of defence (not the story of what happened). PE are likely to continue to a hearing like a well-oiled machine, so try to head that off by emailing PE facts and things that might assist in getting this discontinued. So do you have receipts of proof of purchases such as a bank statement from that visit (the bank transaction will show 48 hours later or so)?
Did you have a disabled person with you or someone with protected characteristics/a condition that meant they need more time to shop? Mention all such information and restate to PE that you did not received any paperwork re this 'charge' so you are now showing them the information you would have produced, had you had a chance to appeal fairly.

Also complain to the Retail Park and Head Offices of whichever shops were used. NOW.
Have you acknowledged the claim on MCOL? Got your deadline for defence extended to 28 days from service of those court papers now?PRIVATE 'PCN'? DON'T PAY BUT DON'T IGNORE IT (except N.Ireland).
