  • You might want to try Rösti potatoes? RÖSTI 2 lbs. potatoes 3 tbsp. butter or peanut oil 1 tsp. salt Potatoes should be cooked at least 1 day before hand. Boil the unpeeled potatoes until semi-tender. On the cooking day, peel and grate the potatoes. Heat butter or oil in a large teflon frying pan. Add potatoes and sprinkle with salt. Using a spatula, press into a very compact, flat, even layer that fills the pan. Reduce heat as soon as potatoes begin to sizzle. Fry very slowly for another 30 minutes. During this time, a brown crust will form. You will need to flip it over and brown the top side too, this is best done by cover the pan with a plate that is big enough to cover the entire pan, carefully flipping it over while holding onto the plate (be careful here!), and then sliding the Rösti back into the pan to cook some more (you may need to add a bit more oil or butter) It's really good with fried eggs, ham, bacon and such!

    I've just remembered another potato thing I used to make a lot (my kitchen's been 'renovating' for 2 years so haven't been cooking much :()

    it's a lot nicer than the ingredients suggest

    you layer sliced boiled potatoes with a mixture (beaten together in a bowl I mean) of cottage cheese, eggs, a little grated cheddar (or other strong cheese) chives if you have some & milk to make a runny enough consistency
    oh, and salt & pepper

    bake at 180/200 or GM 5/6 till it looks golden & puffy

    it's lovely with bread & salad & has lots of protein & is nice (well I think so :D) cold too

    it's a bit vague, but one of those things you make up as you go along (not my usual sort of thing, I'm normally a very 'anal' cook :o ... STICK TO THAT RECIPE :naughty: sorta thing)

    Mash is nice with wholegrain mustard or horseradish stirred in - jazzes it up a bit.
