Meal planning - wk 18th Apr

    Mon. Tuna steaks in teriyaki marinade. Veg stirfry and noodles.
    Tues. Chicken stuffed with spinach andmanchego wrapped in bacon, baby potatoes, asparagus and green beans.
    Wed. Steak pie, chicken pie and vege pie with mushy peas.
    Thurs. Pasta. Quorn spag bol and seafood pasta.
    Fri. Fish in breadcrumbs, few oven chips, frozen veg.

    Cold ham, potato pancakes, pickles and red cabbage coleslaw. Just made the coleslaw. It's a huge red cabbage so off to pickle the rest of it.

    I'm struggling for inspiration at the moment

    Mon - Quorn Korma, rice & pitta
    Tues - Sausage casserole & rice for kids couscous for adults
    Wed - filled pasta and tomato sauce
    Thurs - Chicken in white wine & dumplings
    Fri - Chicken maryland
    Sat - HM Pizza using chapatti flour
    Sun - ?? Needs to be from a recipe as I am out all day and so DH has to make it.

    Well we managed to still to last week's menu so here goes:


    Mon - HM Cheese and onion pie with beans and carrots
    Tues - HM Chicken curry with rice
    Wed - Pasta, creamy cheese and tomato sauce, HM garlic bread
    Thurs - Staffordshire oatcakes with beans and cheese
    Fri - Fishcakes, hashbrowns and peas
    Sat & Sun - leftovers and whatever I decide when I go shopping (whoopsies etc!)


    I'm still using up the store cupboard and working through the forgotten things in the freezer. This will change as I have to start shopping properly again!
    Light bulb moment Feb 2014! Total debt then £17,497.64
    Current debt £8121.16.
    Expected debt free date Aug 2030 with current plan but I will beat that date, I had to adjust it due to a drop in wages :(

    Switch Wednesday (easy to prep in advance and seems easy) with Sunday?

    Doesn't give you an extra meal, but does give a little more freedom.

    Or make Calzones on Saturday that'll keep to be cooked on Sunday?
    That sounds like a classic case of premature extrapolation.

    I have never made calzones but that sounds like a meal that will go down well, thank-you :T

    Wednesday is easy as we don't get in until late
  • hi, some great sound meals ahead for everyone :)


    here's ours
    Monday- Cajun spiced chicken, new potatoes, green beans and sweetcorn.
    Tuesday- Chilli con carne, veg rice and nachos (swapped from last Saturday)
    Wednesday- Cheese and mushroom omelette and baked beans
    Thursday- Toad in the hole (with onions and mushrooms) and roasted vegetables.
    Friday- Turkey and apricot burgers and potato wedges (got the recipe from flipper_72 in last weeks meal planning)
    Saturday- Meatballs and spaghetti, and garlic baguette
    Sunday- Lamb chops, roast potatoes, and veg
