Camper and cheap to run don't really go together, especially if you're after something with 3 seats up front. And you want reliable, and at £2500. Don't want much do you!
Can probably get a 90's bongo/freda (not 3 seats upfront, but can have mid bench converted to be rear facing), diesel 2wd has better mpg than the 4wd. Probably need to convert yourself at that price. They'll be imported, probably rust issues, check the auto box, manuals rarer. Bongos you can get modular units and allseating can be removed in a few minutes to save weight/increase mpg.0 -
Two and a half grand will not get you any form of camper or mobile home that you would want to be in for long. It is that simple. Double that budget for starters.0

Forget it. There aren't many vehicles on the road that hold their price quite like a camper/motor home.
Your budget will be you trouble.
Spend the money on a hotel or wait until you have another £10K0 -
I ran a VW Campavan for years back in the 1970s. Everything possible about these vehicles is awful apart from the sound of the air cooled engines. I got around 18 mpg ! They are not even any good as camper as there is nt any room in them because of the engine bay at the back. Sorry there is something good about them, they seem to appreciate in value. I can t believe that someone would pay 15k for the worlds worst vehicle . OP, just go camping or a trailer tent .2.5k will buy you nothing but heartache and aggro.0

Same with the new standard vans. They're not a bad vehicle, but the culture and image that follows them have pushed the price up to idiotic levels.

nail them in the van
