Left over pork - idea for tea tonight

Hi guys
I have a left over pork joint that I would like to make into something family friendly for tea tonight but my inspiration is zero for this. Can you offer any help? There's me, DH and 2 kids 9/5. We have lots of frozen veg so if all else fails I will slice it and have a mid-week roast dinner, but I am just not feeling that at the moment.

    I did pork stroganoff (using a packet that had been in the cupboard forever) recently and my 10/7 year olds enjoyed it and asked for it again.

    Fajitas is a good one here, you can slice the meat add onion, peppers, kidney beans tinned toms and if you have it cajun spice or small amount of chilli. My 2 love making the fajitas with some grated cheese and plain yoghurt.

    I guess pretend it is chicken and the recipe ideas will come flooding!

    My mum used to slice it and coat it in egg and breadcrumbs and fry it - leftover schnitzel type thing. My sister and I used to love it.

    Shred the pork and mix it into some well-seasoned mashed potato, form into croquettes, egg-and-breadcrumb them and fry gently. Serve with risotto, or veg, or chips, or whatever you fancy :)

    There's some fabulous ideas here, thank you everyone.
    I like the idea of pulled pork and maybe some stir fried rice with it, maybe broccoli on the side (my kids are strange, if it's done in with the meal, ie all in 1, they don't like it, but put the broccoli on the side and they eat it without fuss - I call it picking my battles!


    Given that the pork is cooked, how would I do pulled pork, I actually have a bottle of sauce lingering from goodness knows when as I don't use jars very often. Could I chop the pork up, pour it over and heat through? Simple as that? Thanks again folks.
