Sourdough sticking to a paper?

    I borrowed the book that came out to go with it from a friend who had it, which really had the best info - this recipe really looks like the one from the book:

    but if you can get hold of the book itself, that's the best guide.

    The banneton - I just bought some cheap little wicker bread baskets and line them with double-folded old (but clean!) tea-towels well covered with flour. You put the dough in there for the second prove, as in this recipe: http://www.bbc.co.uk/food/recipes/classic_sourdough_21029 and then just gently tip it out onto the baking tray once it's ready to go in the oven.     I have to say, it tastes great but is a real palaver to make. It broke my heart to keep throwing half the starter away (I kept thinking of all the flour I'd 'spent') so I ended up freezing it and then using it to make sourdough 'pancakes' - yummy in their own right. In the end, I lost heart because it was just such a chore to think about the timings of it all, and went back to simple regular h/m bread.

    I use the lekue silicone molds with that very mix. Nothing sticks to it! And no bowl to wash up.

    (I also don't knead the dough....just let it rise and knock it back a bit)

    I popped into Tesco tonight and picked up some sourdough mixes, next to them were nan bread, foccacia, spelt, soft rolls and a few others reduced to half price as they were discontinued. Hope the sourdough beats the cull.

    The sourdough is not going to be discontinued too, is it?

    The sourdough mix along with another wasn't reduced so I think that's been saved for now.

    Anyway I made mine tonight, did the dough in the bread maker, turned it out gave it a knead and flattened a round cake tin liner onto a round pizza tray, put the loaf on top, then put the shower cap on it and left it for an hour. It didnt stick. Put my soup maker on whilst it baked in the oven. Husband shaking his head asking why was I making soup and bread when tomorrow is the hottest day of the year!!

    Anyway we cut the end off and its really tasty. He can have some with a salad for lunch, tomorrow, I will have mine with the soup.
    I may try some bread rolls with it next.

    I make bread a few times a week, but I have never used parchment at all.

    I put all the ingredients into a bowl and mix together. I then knead the dough on a floured work surface. I then put the dough back into the bowl for the first rise.

    I then grease (with butter) a large baking sheet (actually a pizza sheet) and after I have knocked the dough back and shaped it I then put it onto the baking sheet for the second rise and then straight into the oven for cooking when ready.

    I have also made soughdough bread this way with no problems.

    I have no idea what I am doing wrong then, why is mine so sticky?
    Especially when we use the same mix.. That is just weird

    Hi everyone,
    Right, an update. I have done several things differently yesterday when I was making my last sourdough.


    1/ I had not time for kneading by hand, so instead I put it through knead in bread maker twice.
    2/ for the second rise, I had put few little drops of oil into a glass bowl and spread it around and it didn't stick to it at all.
    3/I bought one of those silicone mats that I dumped the bread onto after the second rise and just put it into the oven.


    The bread came out absolutely fantastic, best I've made so far and no sticking at all!!
