    What about making a nice thick warming custard and then putting a swirl of fruit in the bowl. Lovely for a cold day and really simple and cheap to make.

    It's easy to make jam in a microwave. Use the biggest tall sided bowl you have as the mixture will bubble up once sugar is added. But you don't have to stir microwaved jam at all to stop the sugar burning.


    STRAWBERRY OR RASPERRY JAM (or combination of soft fruit such as BLACKBERRY, BLACKCURRENT, REDCURRANT, GOOSEBERRY ETC.)

    1 lb soft fruit.
    1 tablespoon lemon juice
    12 oz sugar

    1. Hull strawberries. Wash other fruit & put into 5 pint mixing bowl with lemon juice.
    2. Cook on HIGH for 4 –5 minutes or until fruit is soft. Add sugar & stir well.
    3. Cook on HIGH 11 – 12 mins or until setting point is reached. Test by dropping a small amount on a cold plate & leaving in fridge for a couple of minutes. If mixture wrinkles, setting point has been reached.
    4. Cool slightly before putting into clean warm jars. Sterilise jars by washing in soapy water, rinsing and storing in warm oven for 10 mins.

    Fruity porridge is also delicious for winter mornings. Just put a tablespoon of mixed fruit into a Pyrex bowl, add the oats and milk and microwave for three & a half minutes on HIGH.

    Have you thought of a 'Betty' - aha, I hear you say, what is a 'Betty'.

    A betty is lovely, make 4 oz breadcrumbs, fry in 1 oz butter. Add 2 oz sugar. Put a layer of fruit, a layer of half the breadcrumbs, a layer of fruit and the rest of the breadcrumbs. Bake in the oven.
