Off sick, redundancy, ESA

I am currently in my redundancy notice period, and signed off sick. I have some difficulties using the phone, so am planning to print and submit the initial form. Should I wait until I am no longer classed as employed before claiming ESA, or will this delay the start date for my claim (I.e. will the start date be counted from the date they receive my form, if that occurs after my date of becoming unemployed?)
If I complete my form before I am unemployed can I omit my employment details, given that they will be irrelevant for the date from which I want to claim?
I hope that isn't confusing!
