I have found the carpet that I like in a well known carpet store, but it appears to not be on their website or in every store, so I have a feeling they will be discontinuing it soon.
I have also found it online in a few places (not necessarily close to me, so no sure if they would deliver), but if I do buy it online, where do I go to find a carpet fitter (I originally assumed the big store where I was going to buy it from would provide this service)?
Plus, how do I decide on which underlay I need?!

Most of the big stores don't employ fitters, they just use self-employed fitters; you could ask at any local store for the names / numbers of some of the fitters they use. Alternatively, try asking friends / neighbours / local Facebook group for recommendations.
Underlay - if you plan on keeping the carpet for a fair while it's well worth spending a bit extra for a decent quality, thick underlay. Just looking at this site as an example : https://www.carpetright.co.uk/underlay you can see there is a big difference between the cheapest and most expensive.
We've just had a carpet laid last weekend, and went for one of the foam ones - it's certainly very soft and bouncy :-) Any fitter worth his salt will be able to advise you of what's a decent underlay for your particular requirements ( that's what we did, just asked him to supply a "decent" underlay. But he is a local guy who we trust totally, everyone in the village uses him ).

Get a 12 or 11 mm foam underlay, online try underlay express for best prices. I have used them twice. Tredair is a good brand.

When I had my carpets laid I found a Master fitter via this organisation. http://www.nicfltd.org.uk/
Or you can try here http://flooring-forum.co.uk/ & if you post room measurements, width of carpet etc. someone on the forum should be able to tell you how much carpet/underlay etc. you need to buy.
For buying underlay, grippers etc. this company receives excellent reviews & far cheaper than carpet shops. http://www.tradepriced.co.uk/The bigger the bargain, the better I feel.
I should mention that there's only one of me, don't confuse me with others of the same name.0
