kale and chard

Options
Although I cook a lot of OS, and like my greens, I've never really used either of these.
I've got a recipe I want to try that uses chard (sauteed, mixed with cheese, to fill a roulade).
I had a feeling that kale could be a substitute, but don't know - can I tap into the experience on here - also whether any of the greens I'm more familar with (spinach, cabbage of all kinds?) could be used.

Many thanks

Spinach would definitely be an acceptable alternative.

  • Spinach would definitely work, kale probably would too. We grow kale on our allotment and have enjoyed trying it in different ways. Had some in curry instead of spinach this week and it was delicious. Great also wilted down with a little butter and seasoning. Love kale chips too.

It can be an acquired taste as can be v strong, but the one we grew seems fairly mild (and a rich purple colour :-)

I use chard as a substitute for spinach in lots of dishes. Wouldn't use kale in a roulade without wilting it well first, it has a much stronger flavour than spinach or chard. I'd choose chard :)
  • I describe my rainbow chard as "posh spinach"; it wilts down in the same way. Very nice in a curry or stir fry.

Kale is firmer and crunchier but you can use it in the same way.

I've had kale and chard in my veg patch throughout this and last winter; they appear to be idiot-proof.

Kale only takes about 7 minutes on the hob - not too bad for green stuff!

kale is great stir fried with garlic. Once I have a packet open (had to give up allotment) handfuls get chucked in to all sorts of dishes from stir fries to curries. you can also oven roast to make a 'Chinese seaweed' type snack/side
