Probate help needed

Applying for probate and completing the form myself. Mum had an old car which we are scrapping - the garage she used are sorting this for us......but do I need to continue to pay car tax and car insurance until they take it away or can I cancel both from the day I sign the papers to them? For probate do I put the car value as zero or do I need to find out if it's worth anything and how do I do that please- to us it will cost more to get it through its next mot so not worth it...hope that makes sense?

depending on vehicle £100+- scrap value to a breakers.
If local garage are doing it they will probably want a cut £0 is a good guess for what will be left.
(if No IHT it won't matter)
you can stop paying as soon as you do the V5 paperwork to them
You could cancel both now and SORN if it is off the road and the garage is collecting.
[STRIKE]if insurance was paid in full up front they may want cancellation fees that are more than the refund, consider just letting it lapse[/STRIKE].

You should always cancel insurance. If someone at the garage takes it on a joyride and crashes it ( or they leave it on a road and it rolls into another car) , you may be liable for the insurer's losses.
This has happened in cases where someone has sold a vehicle and not cancelled insurance. e.g. http://www.rac.co.uk/forum/showthread.php?19031-car-sold-but-insurance-left-running-now-a-claim-against-me0 -
