In January we were told that some people would be made redundant and that there would be a 30 day consultation persion (due to amount of people affected).
I was told (verbally and in writing) that my job was "at risk"
After the consultation period finished, on the 1st Feb everyne was told thier end date and what they are entitled to, however I was off on that day and despite informing HR of that befoer the 1st and them confirming via email that I would be told what had been decided on the 2nd, I have heard nothing from them (i have heard unnoficially that I am being made redundant).
My question is, as its now over a week since this was supposed to have been done, if they now advise me that my 12 weeks notice started on 1st Feb, is this legal (basically can they "back date" by official notice of redundancy to the 1st Feb?

It depends whether notice has been served or not.

Technically, unless your contract says otherwise, notice doesn't even have to be in writing although an employer would be ill advised to do it orally.

In law notice begins the day after it is issued. Also, the general legal presumption is that mail is delivered. So, if they have reasonable proof that it was sent you would have an uphill battle to convince a court that you didn't receive it.
